I’m all about easy meals right now–the kind of meals that practically cook themselves. I guess my need for easy cooking is because I’m in a transition phase right now. My world as I know it has fundamentally changed.
Harper, my daughter, companion, and co-founder of this blog, just landed in Haiti to begin her 6 month mission trip. My heart is filled with pride and breaking all at the same time.
Harper and I did everything together. We saved rescue ponies, raised baby chicks, and learn to milk a cow together. We cooked together and started this blog together. To say I will miss her is a huge understatement.
Still, I am proud that she is forging her own way. It is time for her to move on. I am grateful that she is giving back. She will learn and grow from this experience.
The thing that will be most difficult for me is that she won’t have cell service or wi-fi most of the time. I won’t be able to call or text her with my next big idea. As difficult as this is, I can’t imagine what parents who have children going into a war zone must feel.
Today, in between calling and texting Harper during her airport layovers, I made this dish one more time to get photos. What a great distraction! Besides, fried rice makes great comfort food!
This recipe is based on a fried rice recipe taught to me by a friend in college. My friend didn’t use a recipe, just eyeballed everything. I find cauliflower fried rice even easier to make than regular fried rice. There’s no reason to make the rice separately. I just cook it in the pan with the other veggies.
I’ve made this rice with both fresh riced cauliflower and frozen riced cauliflower. Either works well. There is no reason to defrost the frozen cauliflower before using. You can also learn how make cauliflower rice.
Pre-riced cauliflower is getting easier and easier to find. I guess all of us low-carb people are putting more pressure on supermarkets to carry products that work for us! Great job everyone! I even found it at my local rural grocery store, both in the produce department and in the frozen department. If you can’t find pre-riced cauliflower, you can rice it yourself with a grater or a food processor.

Ingredients
- 2 tablespoons butter, ghee, coconut oil, or olive oil
- 12 ounces riced cauliflower fresh or frozen
- 1/4 cup carrot finely diced (optional)
- 1 ounce green onion (about 2 large or 4 small) sliced, with white and green parts separated
- 2 cloves garlic crushed
- 1 large egg beaten
- 2 tablespoons gluten-free soy sauce or Tamari (more or less to taste)
- 1 teaspoon toasted sesame oil
Instructions
In a large heavy skillet or wok, melt butter or oil of choice over medium-high heat.
Add carrots and riced cauliflower. Cook, stirring occasionally, until vegetables begin to soften--about 5 minutes.
Stir in the white part of the green onions. Cook until vegetables are almost tender--about 2-3 minutes more. Add the garlic and cook for 1 minute.
Pour in the egg and stir it together with the vegetables. Cook, stirring the mixture frequently, until the egg is scrambled. This takes about 1-2 minutes.
Stir in the soy sauce, green part of green onions, and the sesame oil. Taste and adjust seasoning.

Fantastic! My first time trying cauliflower rice but I have made regular fried rice numerous times and have never made it this good. I think I prefer the flavor of the cauliflower. Thanks for the recipe!

This was wonderful!!! I added bacon. Couldnt tell it wasnt rice. The soy sauce masked the sweetness of the cauliflower! Next time Iwill add chicken or shrimp.i

This is one of my favorite cauliflower recipes EVER!!! I have to say that I was so skeptical about this recipe for 2 reasons!! 1, it was made with cauliflower, and 2, it was so quick and easy!! Boy was I surprised!! i have tried many other recipes using cauliflower and I was always a little disappointed because it just wasn’t nearly as good as the real thing!! This was!! Cauliflower probably has the most carbs in this dish. The carrots have some as well, but I kept the amount low, so they would add color and flavor, but not blow everyones carb limit for the day.

OH MY GOODNESS…. I just started a Keto diet last Thurs and made this for dinner last night (Sunday) now I didn’t have any green onion so I grated maybe two inches I had left over of a zucchini in its place along with the carrot (also grated) and I didn’t have any of the toasted sesame oil, but holy cow THIS IS DELISH!!!! I saved a portion and took it to work today for my fellow co-workers and 5 out of 5 said how wonderful it was.. No, I will say I used the same skillet that I’d fried bacon and then some chicken in earlier, but I don’t taste that and I still used the butter on the ingredient list.. SO SO GOOD – Will def make again and again!!! Now to explore what else you have on here since I found you from pinterest!

Made this using Trader Joes frozen cauliflower rice and frozen peas and carrots. Cooked straight from frozen, no defrosting needed. I also added 12 oz cooked chicken, absolutely delcious 🙂 Thank you for a quick worknight recipe that tastes fantastic.

Omg this recipe is just wow so good. I’ve been eating low carb for a while but hadn’t tried fried rice yet. My hubby just started eating low carb and he was blown away at how good it was followed the recipe as is expect for carrots I used zucchini and added chicken to make it a meal even my children loved this fried rice.

The flavor was very very good. However my cauliflower rice turned out mushy. I followed the cooking times in the recipe. Any ideas about what went wrong? I would definitely make again if I could fix that part.

If you made your own cauliflower rice in a food processor, it might be helpful to squeeze any water out of it into paper towels before using it. Also, be sure the pan is heated before adding the riced cauliflower. I almost always make this with frozen riced cauliflower and don’t bother to defrost it before adding it to the pan. I love the convenience of the frozen riced cauliflower and I actually think the taste is milder than when I use raw riced cauliflower. I have used raw riced cauliflower in the recipe successfully, but mine was pre-riced and I did not do it myself. I hope this helps!

Delicious!! I wish I didn’t have to share it with my daughters because I want more! I couldn’t find riced cauliflower, but got chopped. It’s probav almost same thing. I should have used entire 16 oz bag, but like to follow recipe closely first time. Next time I’ll use it all, add even more carrots and onions and another egg. I threw in some leftover chicken thighs cut up and it made an awesome lunch.

Hi Sarah! My Rice Pilaf may work better for tacos. Adding touch of lime zest and a sprinkle of cilantro (instead of parsley) will make it work even better!

That’s a good question! I fid that fresh pre-riced cauliflower is not as watery as homemade riced cauliflower. I find that using a large skillet and preheating the pan well before adding frozen riced cauliflower seems to help the water dissipate. Overall, I actually find that frozen riced cauliflower is my favorite to use with this recipe. The flavor is milder for some reason and it passes more easily for “rice”.

I calculated 420 mg per serving. This is using salted butter and regular gluten-free soy sauce. You could decrease the sodium content further by using low-sodium soy sauce and unsalted butter.Hope this helps!

Delish!! I’ve been craving chicken fried rice and finally had a chance to make this recipe! From reading the comments it appears to be so versatile. As others I added 12 oz ground chicken. My frozen cauliflower rice included peas, carrots and corn but I added about 1/4 more of peas and carrots. It was amazing! Definitely going to my “tried and true favs” Pinterest board.

I’ve made this several times and added beef, chicken…being on the ketogenic diet. its amazing how you can’t even tell that its cauliflower and not real rice- I have even fooled picky ‘kid eaters”. I also throw broccoli in, which works out best if you saute it first until somewhat tender and set aside to add in the final stir. Great recipe, thank you creator!!! Super fun to get creative with and add your own twist.

This was delicious. I used frozen cauliflower rice and used a whole bag of frozen peas and carrots. We had leftover pork tenderloin from last night so I cut that up and added in. Super fast and delicious.

I added 2 chicken breast, cut them up/diced and added to the final step with an additional 1 tsp of gluten free soy sauce and bamn……… spot on Chicken Fried Rice! Added 1 tsp of Terry Ho’s Yum Yum sauce for an additional 1 net carb. Who needs to go out to table side hibachi when you can make this at home!!! and it taste fantastic if not better than restaurant style!

It was great! I wanted more veg. So added shaved sprouts and green beans with cilantro. Added in shrimp with a cedar plank salmon was terrific!

Great recipe!! Tastes so closer to the real deal from c c honest takeout! I added shrimp and used regular onion because it is what I had. Cut back on carrots and added some broccoli. Next time I will boil a chicken breast and add that as well as some diced ham so it will be like house “fried” rice. I have been struggling with cheating but recipes like this will help me stay on track!

This is delicious. I would like to try making it with fresh cauliflower, but I don’t understand what you mean by “squeeze out excess water.” How can you do that if you don’t pre-cook the cauliflower? Maybe I should microwave it first?

Sometimes when fresh cauliflower is chopped in a food processor, it can release some juice. To squeeze it out, you can put the riced cauliflower on a clean dish towel, gather up the edges, then squeeze out the extra juice. You do not need to precook it for this recipe.

I’m not a huge cauliflower fan at all and most recipes I have tried I hated but I decided to give this one a try and it did not disappoint. I added onion and used a garlic infused canola oil and fresh cauliflower. I also usually add a protein like chicken or teriyaki steak. AMAZING!!!

This was absolutely delish……. I made exactly as written and served with Kung Pao Baked Turkey Meatballs………….. All was restaurant quality. I did use frozen rice as it is so much easier. Great recipe, thank you!

I have put off actually trying fried rice cauliflower. Even though I had 2 large bags in my freezer I just couldn’t convince myself to try it. Tonight my husband finally took the plunge and made your recipe. We followed the recipe except for omitting the carrots. He made Wholesomeyum.com Korean beef to top the rice.
Oh goodness it was so good. I have not had Asian food carry out since starting low carb 4 months ago. I was in heaven. I ate my serving with the beef and then ate a half of another serving of just this rice recipe. THANK YOU for giving me back Asian food.

This was an amazing recipe and idea! I first made my butter and mixed the garlic in kind of what they serve you at Benihana. I added celery and broccoli. I had left over Costco chicken so I sautéed that with low sodium chicken broth then added the chicken at the end. Somewhere I saw something about storing left overs I’m happy to tell you there were none. Husband told me it’s a keeper not to lose the recipe!

Thank you for this post. I’ve always believed that chicken had to be cooked to 180 using an instant read thermometer to be safe. Always dry. I do more grilling outdoors, but I’ll definitely have to look for one of those pans. Should be good for any type of meat.

Tried this last night for me and my mom. Have not had Asian food since starting the keto/low carb lifestyle 6 months ago. So yummy and so easy!
Was trying Kevin’s Natural General Tso’s Sauce since it was low carb and low sodium, a must in my household. Paired perfectly! Now it’ll have to make the rotation.

This is really really good! I’m such a picky eater and I didn’t have high hopes for it. Boy was I wrong! This isn’t a fried rice substitute, it’s a replacement! I think the cauliflower absorbs a bit better than rice making this is ultra flavorful. Impressive!
